Mark Kailis, managing director of Kailis Organic Olive Groves, blends a top drop and the group's 2007 Premium Blend Extra Virgin Olive Oil is a beauty with a delightful grassy aroma and subtle, mildly pungent taste that has just a hint of pepper and doesn't grip the throat, a characteristic of many fresh harvests.
The good thing about this oil is that it is blended to a style, so the flavour is consistent from year to year. Kailis Organic also produces Sublime (lime infused) and Dolce (blood orange infused) varieties for a gourmet treat. The latter won gold at the 2007 Los Angeles International Extra Virgin Olive Oil Competition, with the Sublime and Premium Blend picking up Silver.
Kailis Organic's pilot Baldivis property has been producing medal-winning certified organic extra virgin olive oil for six years but the bulk of its current stock comes from Preston Valley, 240km south of Perth, which is owned by Great Southern with Kailis Organic as manager and olive oil producer through wholly owned subsidiary Organic Olive Management. This group also looks after the group's Avon Valley and Twin Brooks properties. The three total 1500ha, which makes them the world's biggest organic olive management group.
