
OLIVE VARIETIES FOR BLENDS
During the past 22 years at his family’s property in Baldivis, Mark Kailis has been trialing more than 11 varieties of olives suitable for cultivation in Western Australia. For the past 11 years those trials have included modern grove cultivation techniques. These include controls on spacing, pruning, nutrients and water requirements.
The varieties are of an olive oil nature and have been chosen because:
- They are non-experimental meaning the type of crop levels and harvest ability are well documented;
- flavor and oleic acid content are both of a high quality nature; and
- they are able to be harvested in a practical sense using leading-edge technology and equipment.
All the varieties mentioned are ideally suited to the measured temperature range of the Preston Valley and Avon Valley region, providing for ideal growing and harvesting conditions.
FRANTOIO
Origin: Italy
Frantoio provides the majority blend of Kailis Organic's final organic olive oil, it has elegant and floral aromas, with a mild yet subtle mouth feel and no bitter aftertaste.
LECCINO
Origin: Italy
Its aromatic characters are slightly more fruit-driven with a robust palate and mild finish.
CORATINA
Origin: Italy
Extremely aromatic in both its perfumed and fruit characters. A robust palate with a mild to sharp finish.
WA MISSION
Origin: Western Australia
WA Mission is extremely herbaceous with fresh green and powerful aromas. Its palate is robust and extremely peppery with a sharp finish.
CORREGGIOLA POLLINATOR
Origin: Italy
A mild and subtle aroma with a moderate palate and mild finish.
PENDOLINO POLLINATOR
Origin: Italy
From the Frantoio family with the added benefit of being a pollinator.
KALAMATA POLLINATOR
Origin: Greece
Fruity and vibrant aroma with a substantial fresh palate and balanced finish. It is mostly sought after for its intense green colour.
ARBEQUINA
Origin: Spain
High yielding oil and with reliable performance this variety is known for its neutral characters with a great propensity to blend
KORONEIKI
Origin: Greece
Highly sort after as it has an appealing fruit driven nose with a full and generous pallet. The characteristics of the oil are very stable with excellent polyphenols for extended shelf life.
